Vegan Niçoise Salad




Vegan Niçoise Salad is a delicious and meatless twist on the classic French salad. It's packed with protein, fiber, and flavor, making it a complete and satisfying meal.


Ingredients:


  • 2 medium potatoes, cooked and diced
  • 7 ounces (200g) fresh or frozen green beans, cooked
  • 3.5 ounces (100g) black olives, pitted
  • 1 medium cucumber, sliced
  • 1 medium tomato, cut into wedges
  • 1 small red onion, thinly sliced
  • 1/2 roasted red bell pepper, cut into strips
  • 1/4 cup capers
  • 1/4 cup chopped green olives
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste


Instructions:


  • In a large bowl, combine the potatoes, green beans, black olives, cucumber, tomato, red onion, red bell pepper, capers, green olives, basil, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  • Drizzle the dressing over the salad and toss to coat.

Tips:
