Vegan Niçoise Salad
Vegan Niçoise Salad is a delicious and meatless twist on the classic French
salad. It's packed with protein, fiber, and flavor, making it a complete and
satisfying meal.
Ingredients:
- 2 medium potatoes, cooked and diced
- 7 ounces (200g) fresh or frozen green beans, cooked
- 3.5 ounces (100g) black olives, pitted
- 1 medium cucumber, sliced
- 1 medium tomato, cut into wedges
- 1 small red onion, thinly sliced
- 1/2 roasted red bell pepper, cut into strips
- 1/4 cup capers
- 1/4 cup chopped green olives
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
Instructions:
- In a large bowl, combine the potatoes, green beans, black olives, cucumber, tomato, red onion, red bell pepper, capers, green olives, basil, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
